My path will be Taba>Elat>Jordan then hopefully Syria. I know Syria doesn’t grant entry to foreigners with Israeli stamp stigma on their passport but how about Egyptians?

Syrian wouldn’t even allow a Syrian with an Israeli stamp in enter. If you really want to make the journey, then I suggest you ask for a paper stamp when you cross the border. Israel will issue one to you, and you should keep it on you at all times when in Israel.
To answer you, you will not be allowed into Syria with an Israeli stamp, no matter what passport you hold.
